Avonana cake
– Fat free cake with banana and avocado

One of my best friends, Ida, recently had a baby boy; Iver! This had to be celebrated with a cake. A proper birthday cake! So I looked into my fridge, and found an avocado.. The cake had to be a child- friendly cake, in addition to being an healthy cake (kids are high enough on life itself, no need for a huge sugar boost..!). Altough Iver most certainly only has milk now, I am positive he will love this super healthy and fat- free cake made of avocados and bananas. I call it Avonana cake!
This is a proper fruit and veggie cake. This cake just sums up how fantastic fruits and veggies are to use in cakes. They make the texture super moist, and also works as a super substitute for fat. You would never guess that this cake is fat-free OR healthy if you did not know it. The bananas also works as a natural sweetener!
Avonana cake- Fat free cake with banana and avocado
There is nothing to not love about this cake. Easy to make; fat- free (only healthy natural fats, no added), refined sugar- free, propped with healthy fibres, protein and nutrients. It is also gluten- free and milk- free! Ps. if you don´t have organic brown rice syrup, you could substitute it with organic raw honey.
Ingredients:
5 eggs, medium
75 grams organic brown rice syrup
50 grams avocado, ripe
3 bananas, ripe (ca. 300 grams)
1 desilitres milk of choice
60 grams almond flour
60 grams oatmeal flour
2 tablespoons psyllium husk (fibre supplement)
1 teaspoon cinnamon, grounded
1/4 teaspoon vanilla, grounded
1 teaspoon baking powder
Method:
- Whisk eggs and syrup airy and light yellow.
- Mash up bananas and avocado.
- Add all the milk and then the dry ingredients into the egg/syrup mix.
- Carefully add the bananas and avocados with a balloon whisk. Do not whisk too much!
- Pour into a small, rectangular cake tin and bake for about 45 minutes on 175 degrees celcius.
- Pour milk or honey over the cake and let it soak until cooled down.
Enjoy! Eat as is or with chocolate- og caramel frosting. For example the Healthy caramel sauce with coconut or use the The worlds healthiest chocolate frosting, the frosting used on the Dark chocolate banana brownie or on the Healthy banana pudding cake.
