Healthy apple and cardamom muffins
Healthy apple and cardamom muffins
“An apple a day keeps the Doctor away”. But it sure doesen´t keep me away from these Healthy apple and cardamom muffins (..as I am a Doctor..:). I LOVE apples! And cardamom gives it that extra, fresh sidekick! My last apple creation the “Healthy apple and cinnamon biscuits”, has soon turned into a regular at my house. The next month they also will be featured in my regular column in the magazines “Shape Up”, and “Det Nye”.
So I have been experimenting with another magic combination; apples and cardamom! And this classic easy Healthy apple and cardamom muffins recipe are definitively a treat. I almost could not stop eating them. So I am happy they are guilt- free, and propped with healthy fibres, and proteins.
Healthy apple and cardamom muffins
Made in a wink, super healthy, fat- free (!) and propped with fibre, proteins and nutrients. What´s not to love about these easy Healthy apple and cardamom muffins?! Psst. they are gluten- free and dairy- free as all of my recipes are.
Ingredients:
2 dl almond milk/soy milk/lactose- free milk
4 medium sized eggs
100 grams Acasia Honey
200 grams/ ca 1,5 dl applepure (I use organic pure apple pure/”baby food”)
200 grams blanched almond flour
1 tablespoon/10 grams psyllium husk/fibre supplement
1 teaspoon baking powder
1/2 teaspoon grounded cardamom

1 fresh organic green Apples
1 teaspoon grounded cardamom
1-2 tablespoons coconut oil/grapeseed oil
1 tablespoon raw Acasia honey
Method:
- Preheat the oven to 175 degrees celsius. Blend the dry ingredients. Whisk the eggs to a bright yellow colour, add agave syrup and milk. Blend the wet ingredients into the dry ingredients. Mix the batter, so all lumps disappear. Let the batter rest a couple of minutes.
- For the filling: Melt the coconut oil, add the cardamom, acacia honey and apple, fry in it until soft and golden.
- Fill approximately 15 muffins forms with half of the batter. Add the apple filling, and cover with rest of the batter on top. Mix the batter carefully with the end of a spoon, so that the filling spreads a little bit.
- Put the muffins into the preheated oven, and put them in the middle of the oven. Bake for 25-30 mins. Use a toothpick to check if you get any batter on the stick or take one muffin out and check it if you are not sure, before you take them all out. Cool off a little bit. Enjoy!
Serve as they are OR with greek yoghurt blended with vanilla, or vanilla quark on top. The muffins are perfect to freeze, and easily heated up again in the oven or microwave. But I warn you, they are perfectly addictive!
