Healthy chocolate chip almond cookies
These cookies are made using healthy, low- carb, high protein almond flour. Totally guilt- free (vegan and gluten-free!) and so delicious. I have my healthy chocolate chip almond cookies with lactose-free milk or soy- milk. YUM!
In the city where I live it has been raining a lot lately, and today it started to snow. The wet and stormy weather made me crave for cookies. In fact I quite often crave for cookies. BUT I am like the cookie monster (My favorite cookie monster video is when he tries to bake Apple walnut cookies, here). I end up eating all my ingredients..! So I very rarely make it to the end. But this time I made it to the end with all the ingredients (although I have to admit that I started out with a bit more chocolate..), and the result; Healthy chocolate chip almond cookies!
Healthy chocolate chip almond cookies
The perfect guilt- free snack! Packed with protein and healthy fibre, these healthy chocolate chip almond cookies will impress your vegan-, gluten-free -and health- concious friend. Even your Grandma will love them!
Ingredients:
160 grams (or ca. 3 dl) Almond flour
1 teaspoon Psyllium Husk
1 teaspoon baking powder
1/4 teaspoon cinnamon, grounded
1 krm sea salt
3 tablespoons extra virgin coconut oil
3 tablespoons organic Brown rice malt syrup
1 medium banana, mashed
15-20 raw almonds
50-100 grams dark chocolate (min. 70% cacao)
Method:
1. Mix everything in a foodprocessor, except the raw almonds and the dark chocolate.
2. Cut the raw almonds and dark chocolate in chunky pieces. Put them in the foodprocessor, and mix for a couple of seconds.
3. Use two teaspoons and make ca. 16 round balls on the baking sheet. Press them gently down with one hand until round and flat, ca. 0,5 cm high.Bake for ca. 15-17 minutes at 200 degrees celsius.
4. Cool down on a wire rack for ca. 20 minutes. Enjoy!

Hi Stacey! Thanks for your comment! Yes, there is! Substituting brown rice syrup you can use honey or Agave syrup. Instead of psyllium husk you can Add the same amount of coconut flour, almond flour or chia seeds. Just make sure to not Add all the liquid all at once, Since you will need to check the consistence.
