Healthy and quick oatmeal rolls
Healthy and quick oatmeal rolls
I think I am in love with oatmeal. It is so easy to bake with in addition to be super- healthy! These healthy and quick oatmeal rolls are one of my newest creations and I made them in honor of “The healthiest bank” in Norway, Sparebanken Midt-Norge (in my opinion!), as I am so blessed to be assigned as their Nutritional expert. The best things about these healthy and quick oatmeal rolls (except all the health benefits!) are:
1) They contain baking soda, and not yeast = no waiting for them to double in size.
2) You would guess that they took much more time to make, as they melt in your mouth.
3) You can use a spoon to form them, so that you don´t get dough on your hands.
In addition to this they are made of 100% oatmeal flour, propped with heart- healthy fibre and proteins, that help stabilize your bloodsugar so that you don´t get cravings and a prolonged satiety.
Healthy and quick oatmeal rolls
Super quick to make, unbelivably healthy and propped with healthy fibres and protein. These healthy and quick oatmeal rolls make the perfect breakfast, lunch or any-day snack. And they are gluten- free (contain traces of gluten, but completely gluten- free if you use gluten- free oatmeal)!
Ingredients:
250 grams oatmeal flour
3 decilitres water
100 grams quark or greek yoghurt
1 medium organic egg (+ 1 for adding on top before baking)
1/2 ripe banana
1,5 teaspoon baking soda
1 tablespoon psyllium husk (fiber supplement)
1 pinch of salt
Method:
- Mix all the dry- and wet ingredients in separate bowls. Mash the banana, and add it to the wet ingredients.
- Add the wet ingredients to the dry ingredients and mix well. Let rest a couple of minutes (the fiber soak up a lot of water), before you mix the dough some more. The dough are supposed to be a bit glissy, but if you feel it is a bit to runny, add some extra oatmeal flour.
- Cover your hands in a neutral oil, and form round rolls of the dough (approx 10-14 rolls) You can also use 2 tablespoons if you don´t want to get “down and dirty” on the dough.
- Bake in the middle of the oven at 180 degrees celsius for approximately 25-30 minutes. The healthy oatmeal rolls are done when you hear a hollow sound knocking gently at their bottom.
- Cool down on a wire rack. Enjoy!
These healthy and quick oatmeal rolls keep well in room temperature (but be warned; they will disappear as they are so delicious..), and they are also easily frozen. I love to eat them when they are a bit warm, and fresh. YUM!
