Healthy waffle recipe
Finally the month of May: Spring, sun and WAFFLES. This year; healthy waffles! Yes, you heard me. Here is my go on a classic, light and healthy waffle recipe.
Waffles are the most popular cake in Norway, and when visiting a norwegian family you can almost certain that they will serve warm waffles with condiments. I love waffles, they are so sweet, friendly and soft. And so versatile; yummy with both sweet and savory condiments.
To be prepared for the 200th anniversary for the celebration of the Norwegian constitution day the 17th of May, I have done some waffle experimenting to make my version and recipe for that perfect healthy waffle. This is by far my favorite healthy waffle recipe, and believe me; it turns out super light and fluffy.
Healthy waffles- gluten- free
These healthy waffles are super healthy, grain-free, gluten free, low- carb, high protein- and high- fibre. Your body and heart will love these healthy waffles, and your friends would not guess that they are on the healthy side.
Ingredients (3 healthy waffles):
30 grams almond flour
20 grams coconut flour
2 medium egg whites
2 medium eggs
2 teaspoons psyllium husk/ fiber husk (fibre supplement)
1,5 decilitres water
0,5 deciliters milk of choice
½ teaspoon grounded cardemomme
1/4 teaspoon vanilla extract
1 teaspoon baking powder
(3 teaspoons or 15 grams Stevia)
Method:
- Whisp eggs and egg whites to a light and airy texture.
- Add the rest of the ingredients, first the wet ingredients and then the dry ingredients. Blend carefully with a whisk until blended. Let rest for 5 minutes.
- Pour some batter into the waffle maker, use a tablespoon and blend it out, as the batter is thick. Cook until golden, and let rest on a wire rack.
Nutritional facts: 129 kcal- 14 grams protein- 1 g netto carbohydrates- 4 grams dietary fibre.
Tips: Serve the healthy waffles with greek yoghurt, quark and healthy, fresh jam or berries. I also love them with the jam and peanut butter. The one I use at the moment is the powdered and healthier PB2.

I made these and I loved them! Tasted just like normal waffles, except these were way more filling 🙂 I did however have problems with the waffles sticking to the waffle iron, how can I prevent this? Love your blog btw!
Hi Camilla! Thanks for your comment! So happy to hear that you love them (and my blog:)! I am also addicted to them. To prevent them sticking to the waffle iron you can have some coconut oil in the iron before you pour the batter in. If you do not have that you can also use any kind of oil, that can take heat, for example grape seed oil (druekjerne olje). A little bit of butter is also ok to use, if you don´t have any of the above. Good luck! Cheers, Maria
Thanks, I’ll try that! Do you think it would be possible to make these with protein powder for an extra boost? What should I substitute it for in that case? (Sorry if I ask too much haha) 🙂
Yes, it is. I have a recipe coming up with protein pancakes, which can easily be made as waffles. However in this case you could substitute for example the coconut flour for neutral protein powder (ex. soy protein, pea protein). Just make sure to not add all the liquid all at once, but see how much you will need. I think it would be possible to substitute a scoop of protein powder with parts of the almond flour. I have not tried this yet though. Good luck, and thanks for asking! 🙂

I like that your recipes are so easy to follow and I am starting on a new journey. I am allergic to wheat and legumes. Is there a preferred flour that you would recommend instead of almond flour?
